THE BITE: The Bite welcomes Sheepshead Bay Road’s newest business, and I think the only new business to open since Superstorm Sandy devastated the area: Georgian Cuisine Apani. Located at 1520 Sheepshead Bay Road, Georgian Cuisine Apani takes over the space recently vacated by Randazzo’s Sandwich Shop. If memory serves, that location has hosted five different food spots in the past five years. Let’s hope they can break the curse.

Apani, a new Georgian take-out joint, is set to open soon at 1520 Sheepshead Bay Road.

The business replaces Randazzo’s Sandwich Spot, which shuttered in September after a small electrical fire caused havoc in their kitchen. It was open just five months, replacing Grill Master, which closed up shop in August 2011.

It seems it’s been a tough spot for food businesses to find footing, but we wish our new neighbors luck.

THE BITE: This week we try out another of the neighborhood’s kebab joints and dive into Aziza 7. I wonder where the other six are? Located at 2113 Avenue Z, Aziza 7 is a bit off the beaten path and its decor and lighting reminds me more of of hair salon than a restaurant, but I’ve been hearing good things.

Chicken tabaka ($7) is a Georgian dish where a spatchcocked chicken is cooked in a heavy cast iron skillet, or a “tapha” as it’s called in Georgia. Poking around on the interwebs, tabaka translates from Russian to tobacco in English. Odd name for a dish, huh? Not very appetizing to this non-smoker. But don’t let the name fool you. This chicken tabaka is one mighty tasty dish.

To make chicken tabaka, one must first spatchcock a chicken. That’s not a sexual term, F_a_b_a. It’s a culinary technique where one removes the backbone and sternum of the chicken prior to cooking, which allows it to cook more evenly.

Welcome back to The Bite, Sheepshead Bites’ weekly column where we explore the foodstuffs of Sheepshead Bay. Each week we check out a different offering from one of the many restaurants, delis, food carts, bakeries, butchers, fish mongers, or grocers in our neighborhood. If it’s edible, we’ll take a bite.

I really love the food scene in Sheepshead Bay. I don’t know of any other neighborhood that is as diverse as ours when it comes to food. Looking over the previous Bites, we’ve tasted food from almost every continent, from more than 20 different nations, and yet we’ve only traveled within two zip codes.

With so many delicious eats at our disposal, tell me, why is our food scene so overlooked by the “foodies” and the media? Ah, we’ll be doing something about that in the very near future.

This week, we head on over to The Brooklyn Bread House (1718 Jerome Avenue) for some khachapuri, or Georgian cheese bread. What’s khachapuri? Well, Charles Perry over at The LA Times calls it “the world’s most elaborate melted cheese sandwich.” I don’t know if I’d go that far, but it is a mighty fine cheese sandwich.

1724 Ave Z: Tamada awning replaced with Luxury Dental, P.C.

Looks like the building at the corner of Avenue Z and East 18th Street will finally have a new tenant.

After what seemed like years, the burgundy awning for Tamada Restaurant – which served Georgian food – has been replaced with a bright sign of a cartoon tooth holding a toothbrush. That means we’re getting a new dental office – and since Sheepshead Bay is the home of a luxury day care center, it makes sense that there should be a luxury dental center. Okay, okay – so, it’s not exactly a grand opening of a luxury dental center in Sheepshead Bay. Dr. Vadim Firdman – the toothman of this new joint – is only making a move from his 1607 Sheepshead Bay Road location.

We’re not sure when the first appointments are getting made, but if you get in to see Dr. Vadim Firdman put in a good word for us. Sheepshead Bites’ teeth could use a little dental work, especially a little luxury cleaning  on the house.
