		<description>Gaflumoxed in San Diego - Good morning!  In the corner of the US and Mexico I am trying to make bagels.  My problem - I kettle them and as soon as they come out of the water, looking nice and fluffy, they start to drop.  They continue to fall in the oven and when they finish are a doughy, heavy mess.  I am using good fresh yeast, high gluten flour, kneading them for five to ten minutes, letting them rise twice before kettling.  Seem to be doing everything right, then they flop.  Any ideas?  Sure appreciate your time and thought on this.

		<description>While the food here is a bit pricey, it is very good. The owner is extremely friendly and does seem to care about his customers, and that is so refreshing. Since New Clements went out of business last July, it was hard to find a place that made hotcakes and french toast or hash browns in the morning. I was thrilled to see that offered here. The new bakery items are amazing, including even the cold ones such as eclairs. You&#039;ll never want to go to Dunkin&#039; Donuts after having this. I tried the chocolate pudding and it&#039;s extremely rich, but man was it good!</description>

We’ve created a nice price sheet/salad grid which shows every single topping and it’s related cost (this sheet is on top of the glass above the salad bar and is visible to both the employee and the customer).  &lt;br&gt;&lt;br&gt;We apologize for overcharging you $0.50 and are willing to make it up to you.&lt;br&gt;Thanks,&lt;br&gt;Alex</description>
